I know the difference between brining and washing chicken with salt and then rinsing it off with water.

The meat don't taste like vinegar. You can use lemon or lime juice too. All tenderize the meat (denature the protein). You clean the meat before cooking so that you don't contaminated the rest of your kitchen. You also getting rid of debris, excess fat, skin, and hard tendons/ligaments.

Salt is used to cure (preserve) meats. Science 101: Cells in a hypertonic solution (like salty water) shrivel and die (the bacteria dies). And the meat becomes tenderized (protein denatures b/c of salt, polypeptides bonds of amino acids breakdown). Besides adding flavor this the reason for brining.

Vinegar is a product of fermentation where beneficial microbials kill of the bad ones. I use cleaning vinegar (higher concentration that edible vinegar) as non-toxic disinfectant. It also breaks down hard water deposits in tub/shower or kettle or water bottles.

chicken ain’t like other meat. You going to eat under cooked chicken? What is the point of doing all that since the heat kills it? You can eat medium and rare other meats and fish but chicken will still have salmonella all deep in the meat

I wear gloves when handling it and give it a quick rinse to remove any debris... goat is a rinse and any tenderizing gets done when it's cooked for hours like curry goat... poks got vinegar in the marinade so I mainly rinse it with vinegar and again 2-4 hours in the smoker covered meat falls of the bone

Y’all eat more than the skin of chicken right? There’s bacteria deep inside the meat! If you’re eating the meat and it ain’t cooked all the way you will get sick and no amount of lemons and vinegar at will save you. Y’all soaking and scrubbing chicken are going way overboard. You just need to rinse the meat off to get anything from the package off. You don’t need to power wash your meat
