I wear gloves when handling it and give it a quick rinse to remove any debris... goat is a rinse and any tenderizing gets done when it's cooked for hours like curry goat... poks got vinegar in the marinade so I mainly rinse it with vinegar and again 2-4 hours in the smoker covered meat falls of the bone
The meat don't taste like vinegar. You can use lemon or lime juice too. All tenderize the meat (denature the protein). You clean the meat before cooking so that you don't contaminated the rest of your kitchen. You also getting rid of debris, excess fat, skin, and hard tendons/ligaments.
