Fights start on the feet bro. Ya gotta use some stand up to get in there. Dudes got 30ft or so to back up and circle away from em, reach advantage and as you can see, a whopping left hand that can put you the fuck out on the way in.
Plus whenever they shoot it takes massive energy to get a takedown whereas he expends less energy defending it. Eddie actually tried to shoot a few times. Didnt work. He had some success with that leg kick but that takes time and once Conor showed him that have he knew he didn't wanna take those all night.
Conor has the perfect body type for these guys and he knows how to use it. His speed and accuracy is just not something these guys can fuck with.
It used to be that wrestlers had everyone beat because of the takedown ability. Now great strikers have learned how to defend.and wear them out.

Cowboy has length, muai Thai skills (clench) and he admitted that heet Diaz get in his head that fight and that is where he learned his lesson. He also has ground skills which is the style matchup I think would be good for McGregor.
