^^^^^^^^Rinse low grade chicken because I don't trust how it was handled and their maybe debris/bone shavings from processing. That's my reason but if it's higher grade restaurant quality meat, it's an unnecessary step. She lost me at seasoning it after it's in the oil, she obviously doesn't know the basics.
