I know some of you BGOL mofos came in here hoping to see some Caribbean pussy coming out a steaming shower or some shit. :lol::lol::lol:

So me and two of my employees were talking about the weekend's festivities and what not (the usual who grilled what, drank what, etc..).. The subject of fish came up. I was soo hungry for some fish afterwards, I decided to stop by the fish market and the grocery store on the way home for some supplies..

Too rainy out to grill anything, I don't like frying fish inside my house..so I opted for a family favorite "steamed fish" :)

2LB Red Snapper, 6 "dry" sea scallops, whole garlic, 1 medium yellow onion, 1 bunch of green onions, fresh thyme, two yellow bell peppers, four roma tomatoes, 3 limes, Walkerswood Hot & Spicy Jerk seasoning, well seasoned cast iron skillet (been in the family 95 years)

Sauteed the chopped yellow onion and garlic gloves in some butter to get the oils and flavors to start popping, for about 3 minutes.

Added the sliced bell peppers, tomatoes, squeezed lime juice in, add 1 heaping table spoon full of jerk season paste. Cover (mid high heat) and let the sauce start to form and all of the ingredients start to cook down.

Prep fish by stuffing with 1 tablespoon of jerk seasoning paste, green onions, four sprigs of thyme, a pinch of salt.

Add fish of the skillet, sprinkle some cayenne pepper and paprika, cover and simmer for 15 minutes... turn-over, add scallops, and let simmer for another 15 minutes.

Made some red beans and rice (rice and peas), some white whine sangria with sliced peaches on the side.. :yes:

45 minutes later.... They reactivating Gil Grissom from CSI Las Vegas for the crime scene. :D

I have 20 snappers seasoned up in my freezer, been esting fish everyday for the last 2 weeks. I can eat fish everyday for the rest of my life

Damn son you got a nigga mad hungry. Its fucked up out here in cali we can't get real red snapper. They sell rock fish and call them jawns snapper. Niggas from back east know that shit fake though. I'd kill for some fresh Atlantic snapper fried hard with some buttered garlic grits.

Rice and peas - I used cup of Jasmine long grain rice, 1 can of Goya red beans (rinsed off) would have used dry beans but I was in a hurry, dry chopped onions, 2 sprigs of thyme, pinch of salt, and 2 cups of water.

Next time, add some coconut milk and scotch bonnet for that real fire in the rice.

Yeap that true home flavor rice and peas.. But I always fuck it up with the amount of coconut milk to water ratio.. :angry:

The only meat i eat the most is seafood.
I like to cook; have no choice but to. I live alone and the females i deal with aint the type of girls i want to chill and have dinner with. So i cook a lot. but im stil a rookie at the stove.

I had a fish fry one time in my crib..aint did the shit since.
I had a seafood like smell in my shit for almost 5 days.
not stinky.,.but still..

Gonna start practicing some stuff next year once i get some more equipment in my kitchen.


someone should make a thread with recipes and cooking instructions.

interested in international dishes.
