I know some of you BGOL mofos came in here hoping to see some Caribbean pussy coming out a steaming shower or some shit. 


So me and two of my employees were talking about the weekend's festivities and what not (the usual who grilled what, drank what, etc..).. The subject of fish came up. I was soo hungry for some fish afterwards, I decided to stop by the fish market and the grocery store on the way home for some supplies..
Too rainy out to grill anything, I don't like frying fish inside my house..so I opted for a family favorite "steamed fish"
2LB Red Snapper, 6 "dry" sea scallops, whole garlic, 1 medium yellow onion, 1 bunch of green onions, fresh thyme, two yellow bell peppers, four roma tomatoes, 3 limes, Walkerswood Hot & Spicy Jerk seasoning, well seasoned cast iron skillet (been in the family 95 years)
Sauteed the chopped yellow onion and garlic gloves in some butter to get the oils and flavors to start popping, for about 3 minutes.
Added the sliced bell peppers, tomatoes, squeezed lime juice in, add 1 heaping table spoon full of jerk season paste. Cover (mid high heat) and let the sauce start to form and all of the ingredients start to cook down.
Prep fish by stuffing with 1 tablespoon of jerk seasoning paste, green onions, four sprigs of thyme, a pinch of salt.
Add fish of the skillet, sprinkle some cayenne pepper and paprika, cover and simmer for 15 minutes... turn-over, add scallops, and let simmer for another 15 minutes.
Made some red beans and rice (rice and peas), some white whine sangria with sliced peaches on the side..
45 minutes later.... They reactivating Gil Grissom from CSI Las Vegas for the crime scene.
