So what's everyone cooking tonight? Eating tonight? What did you eat yesterday? What do you WANT to eat today?

Today wifey wanted fried pork chops and cheese grits. I didn't feel like frying. Maybe friday i'll do it. So instead i made eggplant hamburgers. With sweet potato fries and purple hull peas.

3 tablespoons olive oil
3 cloves garlic, minced
4 cups cubed eggplant, with peel
1 tablespoon water
1/2 cup grated Parmesan cheese
1 cup chopped fresh parsley
2 eggs, beaten
3/4 cup dried bread crumbs

I make a LOT so i trimmed the recipes down for normal sized families lol. Preheat oven to 350. Grease a baking sheet.
Heat a medium skillet over medium heat.
Pour in olive oil and saute garlic just until lightly browned.
Mix in eggplant and water. Reduce heat to low and cover skillet.
Allow eggplant to steam until soft, about 20 minutes.
Place eggplant in a large bowl and allow to cool slightly.
Mix cheese, parsley, eggs, and bread crumbs into eggplant.
Stir with your hands until ingredients are thoroughly combined and mixture can be rolled into balls.
Add more bread crumbs as needed to make mixture workable. Refrigerate mixture for 15 minutes, then roll into balls or form into patties.
Place eggplant balls on prepared baking sheet. Bake in preheated oven for 30 minutes. Serve immediately. I use avacado instead of mayo by the way.


Sweet tata Fries!
2 large sweet potatos.
1 tbsp olive oil.
1/4 tsp sea salt.
1/4 tsp brown sugar. OR molasses.
Cut the sweet potatos into 1/2 inch strips or wedges and toss in the oil and salt and sugar. Arrange in a single layer on a nonstick baking sheet. Place in oven for 30 minutes, turning once.

2 pounds fresh shucked purple hull peas
2 garlic cloves, whole
1 tablespoon peanut oil
1 1/2 teaspoon sea salt
1/4 teaspoon pepper
(I also sometimes chop up jalapenos and put them in)
enough water to cover peas in the pot
Place all the ingredients in a large pot over medium high heat. Make sure you have enough water to cover the peas with 2 inches of water. After the water comes to a boil, cover with a lid, reduce heat and simmer for 2 hours.

after the first hour check the water level on the peas. Add more water if necessary, you want at least 1 inch of water above the peas. Cover with lid, again, and set the timer for the last hour.

I made the dessert tonight, strawberry cobbler ala mode.
 
No, you can fry them soemtimes i do. Tonight i baked them. i didn't feel like frying tonight lol. I have 11 people to cook for man. It's HOT in my kitchen.
 
I had sushi tonight. That shit was bangin too. The place I went to is pretty nice (I actually went there last Wednesday as well). I also had hot sake, a beer, and some water. Good times and good friends.

What's it called...makogili? The Korean rice wine? LI they drink something in a bottle just like this on Smile, You I noticed today, (ep 20).

I got a bottle of Korean Blackberry Wine that is just simply sweet and suburb. Runs you only about 8 bucks too.
 
Baked barbecue chicken breast, corn on the cob, mixed veggies. Leftovers from yesterday when I didn't really feel like cooking.
 
Yesterday I made some stewed chicken with mashed potato and broccoli.

Slow cooked (and I mean slo like a slo, slow grind) and seasoned with onion, bell pepper (green and red), garlic, celery, bay leaves, thyme, just the right amount of cayenne and a generous amount of Conecuh sausage sliced @ an inch, angled cut.


Fried collards

You would kill for them ((if they haven't killed you first)) if you ever had some. If I gave you the ancient family recipe, I'd have to kill you. Yep. Lotsa killin associated with Collards; like when I was a kid, a man was killed in the fine lady's house next door eating RB & Rice & fried collards, naked. His wife was arrested. They lived across the street.

To avoid death associated with collards, eat or visit neighbors house, sparingly.

Thanks LI- eggplant is one of the few veggie/fruits I am always at a loss with. I love to eat it asian style but other than that and eggplant parmesian :confused:

Man i use eggplant in alot of things. Salads, pasta dishes. Eggplant is always good in a pasta dish

LOL. Naw. Didn't you see my warning? - "To avoid death associated with collards, eat or visit neighbors house, only sparingly." But, staying out of the neighbors house maybe as important as avoiding collards, if you want to stay alive.

long grain rice, diced tomatoes, bell peppers (green & red), garlic, unyon, black pepper, paprika, thyme, red pepper, bay leaves, chicken breast, shrimp and Conecuh sausage -- slowly cooked down until liquids absorbed, or cooked off

- because of the peppers & shrimp & sausage, this goes great with cold beer

- your neighbor will be happy to join you. Be careful. This can get you killed.

2 teaspoons olive oil
4 tablespoons finely chopped onion
1 can black beans
1 can whole kernel corn
1 tablespoon brown sugar
1/4 cup salsa
1/2 teaspoon red pepper flakes
2 tablespoons butter, divided
8 flour tortillas
1 1/2 cups shredded Monterey Jack cheese, divided

Directions

Heat oil in a large saucepan over medium heat. Stir in onion, and cook until softened, about 2 minutes. Stir in beans and corn, then add sugar, salsa, and pepper flakes, mix well. Cook until heated through, about 3 minutes.
Melt 2 teaspoons of the butter in a large skillet over medium heat. Place a tortilla in the skillet, sprinkle evenly with cheese, then top with some of the bean mixture. Place another tortilla on top, cook until golden, then flip and cook on the other side. Repeat with remaining tortillas and filling.

Cucumber Salad and left over purple hull peas. lol

I didn't eat dinner ... I was full from the wrap & salad I had for lunch @ work (for freee) and some cheese doodles (sshhh don't judge)

I'm lucky if I have time to cook during the week with my crazy schedule ... lately its been an only sunday thing or a slow cooker meal one day during the week ... so if you have good slow cooker recipes toss them my way!
 
Tacos, garden Salad, and Carrot cake(Still cooking)

2 tablespoons grapeseed oil
4(i think i cook for 12 remember)6oz boneless short ribs
SeaSalt and cracked black pepper
1 onion, sliced
3 tablespoons minced garlic
2 chipotles, minced
1/2 cup hot salsa
1 quart beef stock
1 jar fire roasted whole red peppers, drained and patted dry
1 jar fire roasted whole yellow peppers, drained and patted dry
1/4 cup chopped cilantro leaves
4 to 6 flour tortillas
2 limes, cut in wedges

Preheat the oven to 400 degrees F.

In a large dutch oven over med-high heat, put in the oil. Season the short ribs with salt and pepper, to taste. Add short ribs to pan, 1 at a time, and sear on all sides until browned. Remove them from the pan to a platter.

In the same dutch oven, over medium-high heat, add the onions. Cook until the onions are well caramelized, about 2 to 3 minutes. Add the garlic and mix well. Stir in the chipotles, salsa, stock and salt and pepper. Bring to a boil, then add the short ribs and cover. Put the pot in the oven and braise the ribs until the meat is fork tender, about 1 1/2 to 2 hours.

Remove the ribs from the oven and shred the meat with 2 forks. Slice the peppers into thin strips and put them in a bowl along with the cilantro. Warm the tortillas in the oven. Assemble the fajitas with the desired amount of short rib meat and top with peppers.

I make carrot cake just like anybody else except i put pecans in mine.
 
anybody do friday night fish at their houses? use to hate going to my grandmas house on fridays nights because i knew i wasnt going to be able to go out because the smells would absorb in my clothes

LOL yea it was plenty for me. Anymore than that and you'll be spending like $30 on sushi :smh: Sometimes when I am super hungry that won't cut it tho.. . so I'll get miso soup and a salad too and that will usually be good.
