I feel Like Chicken tonight, Like chicken TONIGHT!

Gonna experiemnt this weekend......gonna do lasagna sliders....


it's like those miniature cheeseburgers sliders, except it's lasagna.


Instead of baking it in a pan, I'm gonna make little small ones in muffin pans.

1 3lb whole chicken
2 tablespoons sea salt
3 bay leaves
4 sprigs thyme
1 whole red onion
4 peppercorns
2 heads of garlic cut up.


Dumplings

2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon sea salt
1/4 cup chopped chives
1 cup goatmilk
2 brown eggs
1/2 cup honey

Sauce:

2 tblspns butter
2 tblspns oil
carrots, diced
stalks celery, diced
cloves garlic, minced
1 cup frozen pearl onions
1/4 cup heavy cream
bay leaves
1/4 cup all purpose flour
6 cups chicken stock
1 cup frozen peas
i know you said you cook for 12 but do you have room for one more

the recipes i post aren't for 12. lol Nobody i know of around here has 12 people to feed. Not sure. There might be. But most of the recipes i put up i just size down. Yeah i got room for another. You gotta pay though. :nod:

You don't really need desert with food like this. I made lemonade.

Usually, I eat sweets, with creole seasoned ground turkey patties and oil s&p the sweets, til they are moist and pop..! No added sugar little oil. It's an even mix of protein and carbs.

Remember, it is what you add to the sweet potato that increases calories.

well tonight is football night so it is wings and beer night. going to make some of these tonight


got this idea from a thread on the mainboard, was a little skeptical because i am not the biggest fan of ginger. they tasted awesome though, tonight i am going to bump up the heat a little bit and add more chili sauce.
 
I'm thinking i'm going to go ahead and do the wings sunday for the cowboys redkins game. I got a wing recipe that is FAMOUS! lol But yeah. I'm thinking on it.
 
Quick and easy tonight Lemon Linguine with spinach

3 lbs linguine
2 egg yolks
2/3 cup heavy cream
1/2 cup freshly grated Parmesan
1 lemon, zested, and juice of 1/2, plus more juice, as needed
Salt
black pepper
4 tablespoons (1/2 stick) unsalted butter
2 to 3 tablespoons chopped parsley leaves

Nothing to this at all. Mix up your spices and wet ingredients, make your linguine, cook it for however long you do. Usually like 10 min or so. Hit those bad boys together in a big pot. BA DAM!

Good stuff. Thank me later! And....spinach? I heavy steam my spinach with vingar and oil oil and throw in some sea salt. Done. Whole meal for 12 people done in 20 min.

Take out the crabs after about an hour. Then put in your potatoes and shrimp into the mud water. You can use anything you want here, i always use potatoes shrimp and corn. Let that cook for 20 minutes. Pour everything on the table.

Veggie Oil
Chicken Wings.
2 Tb of fresh ginger
1 tblspn habanero chili pepper powder
4 tsp. madras curry powder
1 3/4 cups lime juice
1 cup buttermilk
2 tblspns minced garlic
1 tspn crushed red pepper flakes
1 tblspn sea salt
2 cups all-purpose flour
2 tblspn mixed oregano and thyme
1 tspn black pepper
1 cup honey
2 tblspns lime zest

Put the chicken in a 1gallon resealable plastic food storage bag. In a medium bowl, mix the 1 cup lime juice, the buttermilk, ginger, habanero powder, the curry, garlic, 1 tablespoon of the crushed red pepper and the kosher salt. When finished pour over the chicken in the bag. Seal the bag and fridgerate overnight, or at least 12 hours, turning the bag occasionally

Set your oven to 350.

Set a large Dutch oven over medium high heat with vegetable oil. Heat the oil to to about 350. Take the chicken out and let drain.

Place the flour pepper, salt, oregano and thyme, in a 1 gallon sealable plastic food bag and place the chicken, 8 pieces at a time, in the flour and shake to coat. Lay the coated chicken out to settle for a few minutes before frying. Continue with the remaining chicken until you're done. Fry the chicken in batches of 12 pieces or so. about 7 to 9 minutes. Place the fried chicken n the oven to keep warm as you fry the rest of the chicken. Make sure you let the oil to return to 350 degrees or so before adding more chicken to the hot oil.

Once all the chicken is fried, place the honey, lime zest, the remaining 1/4 cup of lime juice and the remaining 1 teaspoon of crushed red pepper flakes in a small bowl with some blue cheese dressing and mix to combine. My family likes Bluecheese dipping sauce. I really don't like Ranch. Some people use it with this recipe and they say it's good. I don't see how. Blue Cheese is the only way to go for me personally.
 
Pasta primavera tonight. Lazy nigth and we had so much chicken yesterday we went simple.

1 tbsp olive oil
1 white onion, chopped
1 large carrot, thinly sliced
1 1/2 cup broccoli florets(the flower)
1 1/2 in piece fresh asparagus
1 medium red, yellow bell pepper, thinly sliced
2 cloves garlic, finely chopped
1/2 tspn sea salt
1/2 tspn black pepper
1 jar Creamy Alfredo Sauce
1/2 cup water
8 ounces linguine or spaghetti, cooked and drained


Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook onion and carrot, stirring occasionally, about 2 minutes. Add broccoli and peppers and cook, stirring occasionally, another 2 minutes. Stir in garlic, salt and black pepper and cook 30 seconds. Stir in sauce and water and bring to a boil. Reduce heat and simmer, stirring 5 minutes. Serve over hot linguine

old E ain't cheap enough for crabs. you have to get the cheapest bottom of the barrel malt liquor you can find. :lol:
 
Just gonna grill some fish with rice and regular ole black beans tonight.

1 Lemon
4 cloves crushed garlic
1 tspn of parsley
1 tspn of rosemary
1/2 tspn of white pepper
1 tspn of sea salt

Rub the parsley, rosemary, pepper and salt into the fish, and then slap onto the grill for 6 minutes. While cooking sprinkle the garlic on top of the cooking top sides when you flip them. For a pink centered salmon. When you take them off the grill, sprinkle on your lemon juice.

I always cook wild rice with unsalted butter, and my kids love black beans with little pieces of jalapenos dropped in.

1 lb boneless chicken breasts chop'em up
1 tblspn cumin
1 tblspn dried oregano
1/2 tspn ground white pepper
Pinch of red pepper flakes
salt and pepper
1 pound collard greens, stemmed and roughly chopped (about 5 cups)
1 1/2 cups chopped green chiles (fresh or canned)
1 quart chicken broth
2 15-oz cans navy beans, drained and rinsed
1/2 bunch fresh cilantro, chopped
Light sour cream, chopped tomatoes

In a pan, heat the olive oil over medium heat. Add the garlic and onion; cook for 2 to 3 minutes, until slightly soft. Add the chicken, cumin, oregano, white pepper and red pepper flakes. Season with salt and 1 to 2 tspns pepper. Cook, stirring, until the chicken is slightly browned, 3 to 4 minutes.

Add the collard greens and cook, stirring occasionally, until they are slightly wilted, about 5 minutes.

Add the chiles and chicken broth and bring to a boil, stirring occasionally. Reduce the heat to medium-low; cook, stirring occasionally, for approximately 20 minutes, until slightly thickened. Stir in the beans and cook for another 10 minutes. Stir in the cilantro.

Beer is great for marinating meats before grilling and for sauces I use Guiness and Fosters for my shrimp beer batter...
 
Doro Wat

2 lbs finely chopped red onions
2 tblsns unsalted butter
1 cup mixture chile peppers, cloves, coriander, allspice, rue berries(or sapphron)
1 cup water
1 large head of garlic, minced
1 large piece of ginger, minced
1 small handful of black cardamom
1 small chicken(goat, lamb, frog legs, just about any type meat, no pork tho)

Cook onions over medium heat, until liquefied, continuously stirring and adding water in ½ cup increments. Stir in butter, spice mix and water. Cook on low heat for 30 minutes, stirring continuously. Mash garlic and ginger together salt and add to sauce. Cook on low heat for 30 minutes, stirring continuously.

Add chicken pieces to sauce, stir in 1 cup of water, and cook for 20 minutes, stirring occasionally. Stir in cardamom. Add one boiled egg per person. Cover and remove from heat.

Serve with injera(bread) if you can't get any injera, use flax seed bread.

8 cups chicken stock
12 cups pork bone stock
2 bay leaves

8 oz pumpkin
1 yellow plantain
Pinch white pepper
Salt, to taste

In a tall stockpot, add all the vegetables, except for the pumpkin and the yellow plantain, all the meat stocks, bay leaves and cumin. Cook for approximately 30 minutes and add the pumpkin and yellow plantain. Cook for 15 minutes. Allow it to rest for a few minutes. Add salt and white pepper to taste.

even though i am so distracted by your sig i still have a question. Where the hell am i suppose to get fresh corn from this time of year?????
