i think i actually understand what OP is trying to say.

first of all fam, im no aviation expert but i believe they avoid the jet streams because they are very turbulent. So for the most part they fly around them. which causes those loops you posted.

Because Novia Scotia is ridiculously close to New England at that latitude of 60 degrees north. Atlanta is at a latitude around 33 degrees north. The circumference of the Earth is longer at lower latitudes. It makes all the sense in the world for a pilot to go through Novia Scotia, then fly south to ATL.

I feel you on that, but you know way more than I do. On that map I posted it looks like some flights fly directly with and even against the jet streams though. That's why I asked woodchuck do they change directions.
Flight paths. If the shortest distance between two points is a straight line, why do planes travel in this manner? Wouldn't it save a lot of fuel to just go straight? If you turn this map like the map in the OP, do these become straight lines? Science isn't my thing, but I love shit like this, I'm a Scorpio.

How then is it that, with my own eyes, I can see the curvature of the Earth while standing on the bluffs overlooking Lake Michigan here in Milwaukee. I've been to other locations in the world with a vantage point where this can be observed out on the horizon.
In Afghanistan, there were mountain ridges that were so tall that at sunrise, you could see the corona of the sun with the naked eye. It was amazing to see...awe inspiring to say the least. There would be 5 minutes of twilight and then "click" the Sun popped up as though someone literally said "Let there be light!".

NASA and NOAA spends billions of dollars to send up satellites to observe our Earth from all angles. If the OP want people to believe, then he is going to have to come a lot harder than what he presented. "Claims" of two Photoshopped images and his so called proof based on a "stereographic polar map projection" of earth is not convincing enough for me and many others in this thread.
Just got this from a poster who wished to remain anonymous. The real reason flight paths are designed the way they are. Peace, bruh. 
Planes do not fly in straight vectors to and from destinations because when the routes were created, aircraft ground control personnel were sparse. Radar was relatively new radar had huge coverage gaps, and pre computers / early computer system didn't have the ability to track thousands of aircraft flying the same routes.
To lessen the workload, they created layers of sky "lanes" (routes) which can only be occupied through rights management by certain airlines. These routes are often very indirect and bounce from concentric rings of radar zone to radar zone so there are no gaps in flight coverage.
Military air traffic and personal craft flying under 1,000 are the only air traffic that can fly direct routes. Military aircraft typically fly over 35,000 ft so they're not interfering with commercial which stay between 10,000 and 30,000 ft.
Anything above this has to radio in to air traffic control and accept their heading and vector instructions.
GPS has now made it possible now to track aircraft from wheels up to wheels down no matter where and computer systems can now handle the amount of flight and data to manage thousands of aircraft in the air at the same time. As such, there has been a major ongoing overhaul in the FAA to update flight lanes and routes to take the most efficient and direct flight plan possible.
The program is named in NexTgen.

Answer: It is shorter to fly the Great Circle route than a straight line due to the circumference of the earth being so much greater at the equator than near the poles
