What's the secret to cooking rice?

I can cook minute rice with the best of them!! However, I can't cook long grain rice if u paid me!! Looking for any suggestions?

rice/water ratio equal (1 cup rice, 1 cup water)

bring to a boil, turn to low and cook 10-12 mins

Ha ha ha. I used to be just like you OP. Shit used to piss me off that I couldnt cook something as simple as rice. One cup of rice with one cup of water is the standard. However, different brands of rice require more water, and/or different cooking times. You have to stick with one brand and start with the one cup rule. Once you find the right amount of water and cooking time. Your rice will come out perfect everytime.

The ratio is 2 parts water to one part rice. If you want seperate individual rice grains not stuck together you must rinse the rice twice til no more starch comes off then dry it and cook it. I only cook brown so is bring water and seasoning to boil, stir in rice(and peas), bring back to boil, turn down to simmer on LOW, cover and cook for 45 min exactly. Do NOT open lid for 10 minutes just turn off heat. Then after 10 min open it and fluff it up with a fork. Perfect rice every time. The time is 20 mn for white rice.

Ok all of these are correct.


Water and rice.

To make PERFECT rice

Minced garlic and shallot a little oil. Sweat the garlic/shallot (don't burn it) on medium heat then add rice in oil. Allow the rice to become translucent and then add enough water to cover half an inch over the rice.

Boil water until it is right up on the rice then bring down to a simmer

Cover the pot and leave it alone for 15-20 minutes.

Yo pimpin, real talk.. always clean your rice.. rinse over and over until the water stops clouding up. Use a rice cooker, OR when using a pot the water should always come about 1/2 inch over the amount of rice in the pot. (two pinches of salt) (with lid on)Cook on medium high until it starts to boil then turn DOWN to medium and allow water to cook completely out. (NEVER! stir rice while cooking).
