Everything can be hacked, but the issue becomes how much will it cost.

Here, every time they try to access the chip or storage it bricks the Switch. Meaning you need to buy another one to even try something else. So how many Switches are the hackers willing to buy to test out ways to hack it? Could take thousands.

I'm sure it will happen though. We'll just have to see how long it takes.

You mean how many are they willing to buy and return?
 
They have to figure out a way to defeat the hardware protection. Then it will be feasible. Big companies always make mistakes so there's probably a solution out there to do it.

Rather than using trial and error, they could simply slide some money to one of the employees with insider knowledge of the device's security (and its vulnerabilities).
