You'd be surprised who some of the chinese folks have in the kitchen doing the cooking..lol There were a couple on DC that had latino's in the kitchen, I remember talking to the owners & they said once trained they cooked as good if not better than the chinese folks they had cooking..lol

This I already know....but it's what I'm accustomed too saw on one of the chef cooking shows that I watch.... can't be sure which one....but I think it was that one with the slim Ethiopian guy...he goes to different cities and explores the foods cooked by different races in that city....... and if and when I want authentic Chinese recipes.... I'll go to a Chines restaurant that cooks in that fashion

I have only one Chinese restaurant that I deal with.... and I can personally speak for their cleanliness.... from them having and open view of what they're doing.... to actually have done a building inspection there when my shift at the FD was doing building inspections .... and I only fux with one Pizzaria/Italian spot that I deal with....
