Get a good rub coat the meat and coat it heavy expecially the edges... in the water pan smash a cloveof garlic toss it in add a sprig of thyme or (whatever fresh herb you like) toss that in the water pan as well I like pouring a Lil marinade or bbq sauce in the water pan too...low and slow the aromatic smell from your waterpan mixture and the slow smoking brisket will drive a mofo crazy
