One of my old co-workers went to a restaurant in New Orleans that uses them. He said that it was the best steak that he ever ate. He said that the meat was falling off of the bone and every bite was seasoned perfectly. The meat is cooked at the same temp all the way through. No over or under cooking. No burning. Just perfection due to the even constant temperature of the devices. There are other fancy restaurants that use them too. Such as The French Laundry in Cali, Alinea in Chicago or WD-50 in NYC.
question: you cover it when you turn it down right?
