Tofu Scramble
1 block of extra firm tofu
1 can black beans
1 1/2 cups sliced mushrooms
1 Green pepper chopped
1/2 onion chopped
2 cloves garlic minced
Spice mix
2 Tbsp nutritional yeast
1 tsp cayenne pepper
1 tsp ground cumin
1 tsp black salt
3/4 tsp turmeric
1/4 tsp garlic powder
Directions
1) combined spice mix in a bowl
2) break tofu into scrambled egg size pieces
3) heat a frying pan add mushrooms, pepper, onions and garlic. Saute 8 minutes
4) stir in tofu, black beans and spice mix
5) cook another 8 minutes.
Makes 3 servings
You can find black salt at any Indian grocery store. The rest of the ingredients will be at TJ's. I like to press the tofu first, but you don't have to. Cayenne pepper can be swapped for chili powder if you want a more mild dish.
This recipe is cholesterol free and far cheaper than eggs. Leftovers will keep in the fridge for up to a week. Best of all, you can eat breakfast without worrying about sick birds or Donald Trump.

Trump could lower egg prices tomorrow by sending Doge to the USDA with an ultimatum. Either lower food safety standards or have their inspection teams gutted.
Of course most of these cheaper eggs would come from sick birds. It would also open us up to another covid-style pandemic. But I'm sure they could find a way to blame Biden for that too.
What's scary is I could actually see the administration doing that. If you've ever considered going vegan or cutting back your cholesterol now would be the time to do it.
