The rising cost of eggs

I have four eggs left in the fridge and I only use them for baking and thickening up tofu breakfast scrambles.

Once they are gone I'm done. Not going to risk my health or my wallet to eat like everyone else.

Instead, I have a jar full of dried mung beans and have been searching YouTube for egg replacement recipe videos. For baking I'm using 1/3 cup of applesauce instead.

I have three cartons of eggs in my refrigerator so I have family in town so I’m good

Prior to the price hike, majority of people weren’t thinking about eggs.

Now that attention has been brought up, everybody wants eggs.

If there was big spike in Kool-Aid, mofos would be running to the store buying up every package of Kool-Aid on the shelf.

At work, one of the perks is a fair amount of free meals and snacks.


In recent years, I've definitely eaten more eggs on the job, lol. Sunny side up, omelette, scrambled.


Coworker saved me some homemade chicken curry, and flan for dessert yesterday.
