All you have to do to fulfill the requirement is kill the legendary animal. You don't have to turn the pelt in. You only lose out on the cash.
Agreed. Saint Denis has the best gear... but I also noticed that if I went back to the General Store in smaller towns like Valentine, Strawberry & Rhodes... the outfits they sell, seem to be upgraded.
Somehow they look mad different.
Not sure if it’s because I have unlocked certain things, or if it’s because I finished certain missions in the main storyline... but when I look through the old catalogs in those towns, I’m like: “I definitely do NOT remember THIS specific outfit being sold here.
Or I do not remember this specific outfit looking like THIS.” Or maybe these small towns each sell different ‘special’ outfits... because I just assumed that all the small towns sold the exact same outfits in the catalogs. So it didn’t matter where I bought it from.
Because I was in Rhodes like: “Hold Up. They don’t sell any outfits with THIS color scheme in Valentine. And they definitely do not sell THESE (2-tone) boots there, either. Because I just rode down from there like 10-20 minutes ago.”
TIP >> When you use the catalog in the General Store, you can ‘preview’ the whole outfit without buying it. Even if you don’t have enough money for it. And if you hit the right trigger button while previewing it, the camera zooms out to show a full body view.
Ssshhheeeiiit... for a long time, I thought the only place you can ‘preview’ an outfit was at your own tent, in the Base Camp. Or at the Tailor shop in Saint Denis. Or at the Fence/Trapper shops. (And the majority of all those outfits that the Trapper sells are locked until you acquire all the animal skins needed to craft it.
)EDIT >> I think I figured it out. When I went to check out clothes earlier in the game (a few days ago) I had a very limited amount of money, so I probably couldn’t see everything that was ‘locked’... but when I went back (several days later), I had a lot more paper... and probably started seeing the more expensive outfits that were previously unavailable.

I met a woman who is an old-school Archeologist and she asks for help.... but I dunno what happens after that ... I been too busy doing other stuff.

See #5 below .That's the way I've been finding them. But I haven't unlocked all of them yet, tho.
The more side missions & main story missions you play through.. the more & more they begin to unlock, every so often.
However, if you do not want to wait that long.... someone else posted a link in this thread (about 2 or 3 pages back
) that had the locations of all the Legendary Animals.Here’s a few Tips that I found out, which might help...
1 - Donate any provisions; like canned goods, fresh fruit, animal skins, horns, meat, various animal parts & food (in general) to the Camp Butcher.
2 - Donate any cash, jewels, loot items & trinkets to the Contribution box.
3 - Save certain flowers, herbs & plants for the women in the camp. Sooner or later some will ask you to find various ones to make recipes... which increases the core Health, Stamina & Dead Eye meters whenever you eat the Camp Stew, or whenever you hunt / cook your own food outdoors, if you use their recipes.
4 - Save the dry goods, books / letters / reading material that seems insignificant, hard liquor, alcohol, moonshine & tobacco for the fellas in the camp. Sooner or later some will ask you to find random stuff like that for them to make specialized weapons; like fire arrows, explosives, special bullets, Molotov cocktails, or poison arrows... which you can restock @ your ammunition tent. Or they will reward you with information about heists, treasure maps & random side missions.
5 - Go fishing or hunting with the fellas in the camp, when it's available. They will give you tips about which types of bait & lures are best for different types of fish, teach you stuff about hunting and/or take you to Legendary Animal locations

The legendary bull gator cannot be hunted until you finish the chapter 4 mission called Country Pursuits. As expected, it can be found in the swamps of Lemoyne afterwards. His domain is north of Saint Denis,

That Rev Swanson mission was fuckin hilarious. Crakkka was fucked up. 
You have to use the map in your satchel to find the general area.
It will only show up on the map when you enter the surrounding area. Then it will only show up at certain zoom levels.

Had to come back to this question. Red Dead is miles ahead of GTA 5. There were GTA missions that were a bore to do because of the story that they were telling. Some GTA 5 missions didn't even lead to an action sequence. GTA 5 is a satire of America where RDR2 is the story of being an outlaw on the run from the law. I'm 3 chapters deep and there hasn't been one boring mission or side activity that stands out.
Man they might as well just give this game all the awards right now. Can it get an Oscar and a Grammy
