1 cup ketchup
cup cherry preserves
2 tablespoons fresh lemon juice
2 tablespoons light molasses
2 tablespoons light brown sugar
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
1 teaspoon finely grated lemon peel
1 to 2 canned chipotle chiles in adobo, minced, plus 2 tablespoons adobo sauce from can
1 teaspoon unsweetened cocoa powder
1 teaspoon onion powder
Salt and pepper, to taste
Mix ketchup, cherry preserves, lemon juice, molasses, brown sugar, soy sauce, Worcestershire sauce, lemon peel, chipotle chiles, adobo sauce, cocoa powder, and onion powder in a medium saucepan. Bring to a simmer over medium high heat, stirring frequently. Bring heat down to medium low and simmer for 10 minutes, stirring frequently. Remove from heat and season to taste with salt and pepper.

I've modified Alton Brown's recipe from "Good Eats" on Food Network

Alton steams the wings for about eight to ten minutes, then puts them in the fridge for about an hour to cool. From there you put them on a rack above a pan and roast them in a 425 degree oven for 20 minutes, then turn them over and let them go for another 20 minutes.
Once I got my head around the time it takes and tried it, I found them to be crispy, juicy but fat free. One of my modifications is popping them in the freezer for 15 to 20 minutes.
Saucing comes at the end...
Interesting. So basically place the wings on a rack in the oven with a pan underneath them? Would the oven not get messy if the wings platter?
Wings for me come down to the sauce.
