Chicken Wing Ideas

You would think a thread about Chicken on a Black Message Board would be a 100 pages...maybe cats at Church or something.

Don't worry some health freak will be up in here talking about how bad it is to eat fried food.

EAT WHAT YOU WANT, YOUR GONNA DIE ANYWAY.:yes:

Korean Fried Chicken Wings

20100413-kfc-chicken.jpg

16 chicken wings
Canola oil, for frying
5 cloves garlic
2-inch piece peeled ginger
3 tablespoons soy sauce
1 1/2 tablespoons rice vinegar
1 tablespoon Asian sesame oil
1 tablespoon honey
2⁄3 cup flour
1 tablespoon cornstarch

1) Remove the tip of each chicken wing and cut in half at the joint to create 2 pieces. In a heavy pot such as a dutch oven, pour in canola oil to a depth of 2 inches. Heat over medium-high until a deep-fry thermometer reads 350°F.

2) In the meantime, pulse the ginger and garlic in a food processor until minced, then add the soy, gojujang, vinegar, oil, and honey. (You might start with half the gojujang and then add it to taste; different brands have varying levels of spiciness).

3) In a large bowl, whisk the cornstarch, flour, and water together to make a loose paste. Add the chicken wings and toss well to coat. Fry the chicken in batches for 6 minutes, until golden, then drain on paper towels and bring the oil back up to 350°F. Fry for a second time until it is crisp, 6 to 8 minutes more. Drain on paper towels, toss with the sauce, and serve.

Grilled Wings with Spicy Maple Glaze

maple_wings.jpg

1 package chicken wings (about 18-24)
1/4 cup pure maple syrup
3 TBSP brown sugar
1 TBSP butter
3 TBSP Thai chili sauce

Season the wings with salt and pepper or your favorite all-purpose seasoning. Fire up your grill for low heat. Gas is fine, charcoal is better.
In a small sauce pan, add the syrup, sugar, butter and chili sauce. bring to a simmer, whisking briskly. Remove from heat.
Grill the wings over this low heat for about 20-25 minutes, or until the skin is nicely browned and crisp. About 2 minutes before you plan to recover them, baste the wings with the maple glaze.

Sounds slammin'!! :yes::yes::yes:

Chick-Fil-A Chicken Sandwich OR CHICKEN NUGGETS

**Note- This was written by someone as a recipe they found comparable to Chick-Fil-A. As their lawyers have reminded me- Chick-Fil_A does not share their recipe and this is not THE recipe***

3 cups Peanut oil
1 Egg
1 cup Milk
1 cup Flour
2-1/2 Teaspoons Powdered sugar
1/2 Teaspoon Pepper
2 Tablespoons Salt
2 Skinless, boneless chicken breasts, halved
4 Plain hamburger buns
2 Tablespoons Melted butter
8 Dill pickle slices

Mix together the egg and milk. Place the filets in this mixture, and let
sit for at least an hour.
While the breasts are sitting, mix together the Flour, Sugar, Pepper, and
Salt.
Once the sitting is done, dredge in the flour. (For ourselves and our
favourite customers, after the first dredging, we would put them back in the
milk bath for a few seconds, and re-dredge! This is not company policy,
however!)
Place the Peanut oil in a deep fat fryer, and bring up to a high heat.
Once up to 375 F., gently drop into the oil, and let cook until golden
brown. (This is for those of us who do not have a pressure cooker. If you
do, follow the note below!)

Note: Chick-Fil-A actually uses a Pressure Cooker to cook the Filets in. If
you have one, use the peanut oil according to the instructions for frying in
it. Desired heat is 400 F. Once steam starts shooting through, cook for
about 4 Minutes.
Lightly butter the buns, and grill until heated through. Place two
pickles on each bun, and place a hot breast on each!

going to make these in a few will be back with a review on how they taste

Peanut oil, for frying
Kosher salt
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
3 pounds chicken wings, cut at joint
1/2 stick (2 ounces) butter
2 cloves garlic, chopped
1/2 cup peach preserves
1/4 cup hot sauce (recommended: Tabasco)
1 tablespoon soy sauce

Directions

Preheat deep fryer with peanut oil to 350 degrees F.

Mix the 2 teaspoons salt, smoked paprika, and garlic powder together in a small bowl.

Add chicken wings and toss to coat.

Cook's Note: Let wings sit out at room temperature while you make the sauce to allow them time to absorb the seasonings.

Melt the butter in medium saucepan over medium heat with the garlic.

Stir in peach preserves, hot sauce, and soy sauce. Cook until syrupy and thick, about 5 minutes. Transfer to a large bowl.

Add the wings to the deep fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You will need to do this in 2 batches so you don't overcrowd your fryer.

Remove the wings from the fryer and drain on a paper towel-lined baking tray.

Add the fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Using a slotted spoon, remove the wings to a platter and serve immediately.

Final thoughts - They came out nice. I could have added cayenne pepper to the sauce for more of a kick, but it still had a little kick that came in after you tasted the sweetness first.

The next one I want to try are ranch wings. Any ideas?

I fry my wings hard as fuck...medium heat, no batter, for a bout 20-30 minutes. There were about 5 or so sauces that I liked having on my wings, so one day I just said fuck it and combined em into one! This ain't for everybody, but this shit tastes better than it sounds! Adjust to your preferences:
Lemon Juice
BBQ Sauce
Hot Sauce (like 2 different kinds at least)
Butter
Minced Garlic
Lemon pepper seasoning
Soy Sauce
Green onions, chopped
Cayenne pepper
White wine or Vodka (just a splash!)
Start with the Garlic and Butter, saute that, then add the remaining ingredients and heat da shit on low while your wings are frying. Once completely heated up, sprinkle some cheese in that sauce, then a little more garlic. Toss ya wings in there. After plating, drizzle with ranch and toss a couple more green onions on there! Maaaaaaaaaaaaaan you'll be shaking like a fiend after eating those

Nowadays, I rarely or never fry my wings. Just bake. They can be baked hard to achieve crispiness too

Alright...yall need to elaborate! Temperatures, times, etc...and how crispy do they turn out? I like the skin to get to the point where it's not fatty at all

watch the video for the clifton springs wings in this thread for directions on how to oven fry the wings...

400 degrees for 75 minutes. This is for a cookie sheet of wings.

Ninja listen to me bruh, get your wings clean um in lemon juice/water. season them then flour them deep fry then rest on paper towels then get you some hot sauce what ever kind you like, i use texas pete. Get you some spicey/sweet bbq sauce and mix it with texas pete sauce, then dip wings in sauce then put on baking pan and bake for 15 minutes.. everything comes together in oven, no drippy sauce, all flavors are sealed in the wings. damn check these out i mad last week...

Awww man, you just put a brotha on a mission this week. Subbed :lol::dance:

The clifton springs recipe has batter so I know the recipe has to be slightly tweaked...are you guys going batterless?

there is no batter on the clifton springs they just have flour. with flour you can use whole wheat flour to make it a little healthier if you choose.
