Aside from the joke of you constantly referring the ginger as garlic, most ginger scallion recipes call for a finer chop and cooked in very high heat. Your technique is familiar with some cooks, preferring to use hot oil to finish the cooking process. However, your oil wasn't even smoky-hot to bring out the full flavors of your sauce. If you look at every other video, featuring professional or home cook wives, they all share a similar cooking process that doesn't reflect yours. I highly suggest a redo.
