What does Jerk Chicken supposed to taste like?

I’m from the south, so I didn’t get hip to Caribbean food until about 10 or so years ago.
I tried jerk chicken again after a terrible first experience from years earlier.

That shit tasted like the inside of a cauldron. It was straight heat. It destroyed my tastebuds and I couldn’t finish it.

Is that how it’s supposed to be?

It can be either mild or hot. Mild is real flavorful. I made a me jerk chicken wings 2 years ago. My first time at ng it was in high school when we had a pot luck. Jerk chicken and rice.

I had the stupid idea of making jerk chicken strips one time. I bought some tyson chicken strips and marinated them in jerk seasoning thinking it was going through be a tasty new sensation. The breading soaked up all the seasoning and the spices got concentrated instead of of evening out. Man that shit was an inferno.

Yea I hate super or even spicy food that burns my mouth after I'm done eating. Where did you get the food? It's best to get Caribbean food from someone you know who's from the Caribbean.

I think the thing that makes her jerk chicken good, is that she marinates it at room temperature.

Yeah man. I start the process by letting the chicken soak in water and vinegar for about two hours. Then the cleaning of the chicken takes place. After that the seasoning of the chicken. Then I put the chicken in a sealed container and let it sit on the counter for at least three hours before putting it all in the refrigerator for the next day of cooking. I use a beer can stand when cooking on the grill.

You definitely should taste some smoke with the flavor. That's why oven jerk chicken don't hit the same as from the grill IMO.
Some people get pimento wood flown in from wherever.
Also, the grill burns off some of the heat from scotch bonnet pepper on the skin.

You should taste flavor, not just heat.

Where in NC are you get it from? If you're in Raleigh & got it from Lee's Kitchen then yeah it's trash & hot for no reason. Gotta get it from Mum's Kitchen, Jamaican Grille or Jerk Masters

Must've caught them on a off day. That's my primary goto spot whenever I don't feel like making my own. I have caught a batch that were hotter than usual before but it's normally mild to me. Their rice & peas is very flavorful especially with oxtail gravy added

liquid smoke is decent but this really works
