4 chicken thighs
2 sweet potatoes (chunks)
2 corn-on-cob (chopped)
200g baby tomatoes Chopped
1 large onion (chopped)
4 gloves of garlic
Potatoes (chunks)
Courgette (chopped)
1 Lime squeezed
1 tbsp all purpose seasoning
1 tsp salt
1tsp thyme
1 tsp black pepper
1 tsp paprika
1 scotch bonnet chopped
2 tbsp butter
Olive oil
Parsley for garnish

Method
In a mixing bowl, add melted butter, all purpose seasoning, thyme, paprika, salt, black pepper, squeeze of lime, scotch bonnet and olive oil mix together. Score chicken, fling into mixing bowl & coat with marinade. Marinate overnight if you have time

Wash vegetables. Then microwave the sweet potatoes & potatoes until semi soft. Then place them & rest of the vegetables into a oven tray, dash on salt, black pepper, olive oil and mix together.

Fling in the marinated chicken and spread out evenly.

Cook for 45 minutes in oven on 180oc
