Sorry, Babe. I did smoked turkey one year and didn't care for it. The greens tasted ok, but I didn't care for the taste of the turkey itself.

Aye if you ever want a helping hand, I'll make sure your greens are properly tenderized and seasoned, haha

I just didn't care for the taste or texture. It was the first and time I used turkey so it could have just been something I did wrong. Everyone else swears by smoked turkey. I'm making cabbage tomorrow instead of greens though.
I can totally dig that. I've been smoking turkeys for years and I still haven't gotten it figured out to a science. I discovered two new things this Thanksgiving go-around!!!

Yep, I've done that before too. Although I've been thinking about it for a while, the new thing I did this year is to use more wood instead of charcoal. As you head east and south from Cali, I noticed that folks get down with stick / wood burning instead of charcoal. Now, I usually use soaked hickory or mesquite chips to infuse that flavor, but this year I bought a huge bag of lump 100% mesquite charcoal (petrified wood) and it made a huge difference. My fire burned hotter and far longer than it ever has which allowed me to control my temperature better!!! I also spatchcocked my bird / cut the backbone out and lay it flat on the grill instead of leaving it whole.

My nephew sent me a plate and he cooked his greens with smoked turkey. The greens were good, but the meat just isn't as satisfying or flavorful to me. The greens themselves were as good as ones cooked with hamhocks tho.

I've been meaning to try the lump charcoal. I didn't cook out at all this year tho.

That lump charcoal is a game changer, especially for me here in Cali where I'm not going find or run across free mesquite or hickory just lying around.
