Sloppy Joe Cornbread Casserole
She may not be winning any beauty contests once she’s scooped onto a plate, but GOOD LORD does she have a great personality.
And as someone who LOVES Manwich, this homemade Sloppy Joe sauce tastes like Manwich leveled the fuck up. Sweet, tangy, beefy and SO freaking good.
Sloppy Joe:2 lbs ground beef1 medium onion, diced1½ tbsp garlic1 cup ketchup¼ cup tomato paste3 tbsp Worcestershire2 tbsp yellow mustard¼ cup brown sugar2 tsp beef Better Than Bouillon + ½ cup water2 cups sharp cheddar
Cornbread:2 boxes Jiffy1 can creamed corn¾ can golden sweet corn, drained2 eggs⅔ cup sour cream4 tbsp melted butter¼ cup honey
Brown beef and onion, add garlic, then remaining Sloppy Joe ingredients. Simmer until thick. Spread in a 9x13 and top with cheese.
Mix cornbread ingredients and spread over the top. Bake uncovered at 375° for 30–40 minutes, until golden and set.
Finish with ½ stick melted butter + about ¼ cup honey brushed ALL OVER that hot cornbread. Let sit 10 minutes and dig in.
