Puerto Rican Pernil with a Jamaican Twist
Ingredients
* 1 Pork Shoulder (10–15 lbs)
* 1 Cup Fresh Garlic, Crushed
* 1 Cup Fresh Sofrito
* 2 Tbsp Spice Jamaica Reggae Blend
* 1 Tbsp Spice Jamaica 876 Red Seasoning
* 1 Tbsp Spice Jamaica Garlic & Herb Blend
* ½ Cup Vegetable Oil
* 1–2 Tbsp Salt (for the skin)
* 2 Limes
* 1 Cup Vinegar
* Water (for washing)
Instructions
1. Wash the pork shoulder with lime, vinegar, and water. Pat dry.
2. Mix garlic, sofrito, Reggae Blend, 876 Red Seasoning, Garlic & Herb Blend, and vegetable oil.
3. Fold back the skin and make deep cuts all over the pork.
4. Stuff the garlic and sofrito mixture deep into the pork and rub the remaining marinade all over.
5. Pat the skin dry and season lightly with salt and 876 Red Seasoning.
6. Cover and marinate for 24 hours.
7. Roast covered at 375°F for 3½ hours.
8. Baste every 1–1½ hours with the pan juices.
9. Remove the foil, increase the temperature to 400°F, and roast for another 45 minutes to 1 hour until the skin is crispy and golden.
10. Rest for 15–20 minutes before slicing or pulling.

The 876 Red Seasoning is my secret weapon on the skin. It helps create that beautiful rich golden-red color while adding another layer of Caribbean flavor. Combined with the Reggae Blend and Garlic & Herb Blend, every bite is packed with bold island taste.
