One is sharp, salty, and crumbly (the real Pecorino Romano, made from sheep’s milk
), while the other is milder, softer, and made from cow’s milk
. Both are cheeses people enjoy, but they’re not quite the same thing. Of course, this is just a simplified comparison... cheeses vary so much by region, producer, and tradition. Still, it’s a fun way to see how two “Romanos” can taste so different.
