INGREDIENTS

Snapper fish
Thyme
Pepper
Salt
Spring onion
Scotch bonnet
1 cup vegetable oil
1/4 vinegar
1 cup Carrots (sliced or circle style)
1 cup onions (circle style)
1 cup peppers (long shaped)
optional - flour, pimento, all purpose seasoning

PROCESS

1. Scales fish and take hairs off
2. Pat fish dry
3. Slit fish twice on each side
4. Season fish with 1/2 tsp salt and pepper garlic. Place thyme and spring onion inside fish
5. Marinate over night (optional)
6. 1 cup of oil in frying pan medium high heat
7. Place fish in carefully
8.cook for 5-7 mins on each side till golden brown
9.place Fish on paper towel
Escovitch dressing
10. 1/4 cup white vinegar in frying pan on medium high heat
11. Remainder of oil using to cook fish in frying pan
12. 1 tsp sugar
13. Add 1 cup of Carrots onions peppers and 1 chopped Scotch bonnet pepper
14. Cook for 10-15 mins
15. Serve veg on to fish

INGREDIENTS

1 1/2 cups Flour
1 Cup Cornmeal
3 tsp sugar
1tsp salt
1 tsp vanilla
3tsp baking powder
1 cup ice cold water
1 cup Oil
Optional 1 beaten Egg
Put 1 1/2 cups of flour and 1 cup of cornmeal in to a bowl and mix together.

Then add 3 tsp of Sugar, 1 tsp salt 3 tsp Baking powder and Vanilla into the bowl and mix all together.

Add Half a cup of water into the bowl and mix with hands.

Then add another half a cup of ice cold water gradually.

Mix untill you form a medium- large ball.

Then wrap dough in foil and put in fridge for upto 15 mins.

Cut the dough into 8 peices carefully and roll into a long thick shape.

Place rolled long shaped pastry carefully into frying pan with 1 cup of vegetable oil. (make sure oil is sizzle hot - then lower to medium heat after placing pastry in)

Cook untill golden brown on each side for 5 min. Then place festival onto kitchen towel and let it rest. Then serve

Serves 4 people.
