Jamaican style salt fish fritters with mackerel / dutty gyal / flash out fry up.


Wash and rinse 2 to 3 times to remove salt Then boil it of for 3 to 5 minutes Remove rinse and leave in water until ready to add to the mixture. In a bowl 200g flour diced 1 tomato 1 third of red yellow green peppers 2 cloves garlic 1 spring onion Cracked black pepper A touch of scotch bonnet pepper half tsp all purpose seasoning Then the saltfish from earlier Pull this apart in to smaller bits 1/4 tsp baking powder And then slowly mix with water in to thick enough mixture Then you will fry for 2 to 3 minutes on each side until fully cooked For the mackerel Use same veggies but cut into juliennesThe peppers 1 onion 3 cloves Garlic scotch bonnet fir heat Salt amd pepper to taste
