I make salmon cakes and croquettes with fresh salmon all you do is poach it and then drain and flake it and proceed as usual and I like to put onion, celery, pepper and fresh dill in mine

PC, I'm the opposite, I love to cook, however lately I have been trying to step my baking game up. I did some cookies from scratch a few weeks ago and (although technically not baked) some peanut butter fudge. Next up, fudgey brownies when I'm back on it.

I'm doing curry chicken this weekend, I am gonna pull out my slow cooker on that one...

ok marinating chicken.


Believe it or not marinating is "easy". You can make your own marinade like i did here or buy some off the shelf at a grocery store.

the marinade i made for the chicken here is very very quick and simple.

1 cup of olive oil
a few shakes of sea salt, pepper, dill, garlic, and onion powder

cover up and stick in the fridge. i keep mine in 24 hours, turning the meat once halfway through.

these i'm going to grill. set your grill up.

the best way of knowing when the grill is hot enough is by the hand method. hold your hand over the coals....it it becomes to unbearable at 8 seconds your good. if it becomes too within 3-5 you need to raise the rack the meat is laying on.

the trick when grilling is to turn over constantly. you want it to cook evenly without burning or drying out.

if you want that flavor. you have to change up every so often. and by creating the marinade yourself you control what goes in and how it tastes.

I agree...I mean, when grilling and baking, I may throw some Tony's in the mix...but, there are times I love to use some minced garlic alone, with a sprinkle of salt, etc. And, olive oil is a great base for marinades, as well. But, I love Tony's because it combines some of the best spices altogether in one concoction...it's great for cooking some creole and cajun dishes, but can get kinda overwhelming if you're just using it to season some steak or something :lol:
 
thanks i was wondering. i've never deep fried food. can't stand cooking with oil.

If you do have to cook with oil try olive or peanut oil. Sear a little fish or chicken, (I even put it in my hamburgers), with a little olive oil and it goes a long way. It's expensive though in most places...

...if you have to deep fry, or you want something that calls for it, (homemade doughnuts), get the peanut oil. That is REALLY expensive but it has a much cleaner taste than the other oils and is suppose to be healthier. To me personally, it doesn't seem to be a greasy as the other oils too.



On a side note, Don got me wanting some baked chicken. Them grilled joints he posted looked just like the ones that come out my oven.
