How do you make your home made macaroni and cheese and what type of cheese do you use?

I'm looking at potentially having to spend at least 30 dollars on the cheese and wanted to get some pointers before I try my hand at this for the holiday.

Nah, just using that as an example. It's a blend...cheddar, Monterey and either goat or brie (for creaminess). I mix in seared pork belly and top it off with some thinly sliced homemade onion rings for crunch.

5lbs of cheese isn't $11 when hoffmans' sharp cheddar is 10/lb. land o' lakes american 6.99/lb and so on... only that guv'ment cheese comes out to $11 for 5lbs (even though that guv'ment cheese back in the day mixed with cheddar was decent)

If you're making Mac & cheese using $30 worth of cheese, more power to you. Buying block cheese will save you a few bucks if you want to get a workout grating. My blend... around $10. No complaints only empty plates.
