I always trim and soak my meat in lemon or vinegar for several minutes and then I rinse it off with water. I have no idea where this meat was processed and what it has come in contact with.

Lol if you wash your meat under running water you are doing it wrong

You just need to rinse it in a large bowl with lemon/lime juice or vinegar.
And clean your sink when you’re done (as you should)
Some of y’all wash your hair and brush your teeth in your kitchen sink... I’m not sure you realize how much bacteria and viruses you can find in those places (especially your mouth but lemme mind my business

If you don’t wash your meat then okay... that’s ya business
Just remember microorganisms like bacteria and viruses aren’t the only things that are on raw meat
There might be parasites, fungi etc on it that may not die even after cooking
So it’s not very accurate to say all germs will be killed after cooking...
But as I said, if you don’t wash your meat then good for you
