Grandma Barb's Baked BBQ Chicken Recipe

I also used some store bought Dr. Pepper BBQ sauce instead of the sauce mentioned in the video. The main thing for me was the technique. I used whole chicken legs, spice rub under the skin then sprinkled over...let em rest while I was at the gym, came back and did the damn thing.

Also, I use Alton Brown's 8-3-1-1 spice rub recipe as a base:

8 parts brown sugar
3 parts salt
1 part chili powder
1 part made up of as many other spices as you want as long as it totals one part.

My "other part" included garlic/onion powder, mustard powder, black pepper, paprika, I think cinnamon and cayenne...and of course you can freak the whole thing depending on your own tastes.

UPDATE: I've made this about 4 times now. The last few times, I noticed that the junts weren't cooked through to my satisfaction (they were def cooked enough to safely consume, but I don't like no pink at all). So this last batch I made, I cooked 'em at 375 for 35 mins, THEN cranked it up to 450 for another 15 mins (rather than 450 the entire way). That got then just the way I like...

Also, I used some Grace Jerk Seasoning (dry).. then hit em with some Bullseye Bbq sauce (was on sale .99 @ Trade Fair) .. + Carolina Chicken rice+Cucumber/Tomato salad....It was all that :dance:
