They are their own species from the shivering sea. This is readily available internet info. I didn't even read the HBO leaks. In fact there's no proof they have Ice Dragons on the show. I just think it means that Jon, being a Targaryan, has a natural if tentative comfort level with dragons, and the dragons with him. The first time he encountered one, it was total surprise coming at him out of nowhere, so he dove for cover. Like you said, any other person should have run away, but Jon isn't any other person... he's one of the last of the Targaryans. I do think it would have been better if he would have kind of by accident been seen to not be burned by fire first.

George RR Martin himself has said many times, in many interviews...
"The Books are the Books... but the Show is the Show."
Which means that the TV Show can take 'creative liberties' to move the storylines forward.
For seasons 1-5... the tv show had followed the books.
For seasons 6-8... the tv show is moving ahead of the books (into uncharted territory).
Looks like there people in this thread who have read the books, who post stuff that happen only in the books.... as if they happened on the tv show.

For a dragon, maybe that was its house cat act. Remember 3, maybe for seasons ago, Dany was sitting up on a rock with Drogon and he was being real docile while she was petting him and then he bullied one of his brothers and she tried to stop him and he roared all up in her face like "bitch you don't know me like that!"... and that was his "mom" who he has known since birth. Jon is a Targaryan, and he senses that, but he still doesn't know him yet, so he's not gonna be all docile with him.... shit, Drogon sees the way he be looking at his mom's titties! ....he's probably thinking "ok, I sense you're one of us, but I don't fully trust you yet so tread lightly... oh yeah and one more thing mufucka.... don't be touchin my mom...
