·Flavorful Vegetable Stir Fry
A vibrant, quick, and healthy dish ready in under 30 minutes—perfect as a light meal or side!

Ingredients
For the Stir Fry:
1 tbsp olive oil
½ cup carrots, sliced
1 cup mushrooms, sliced
1 cup broccoli florets
¾ cup red/yellow bell peppers, sliced
1 cup snow peas
½ cup water chestnuts, sliced
¾ cup baby corn, sliced
2 tsp garlic, minced
1 tsp ginger, minced
Salt & pepper to taste
For the Sauce:
¼ cup broth (veg/chicken) or water
¼ cup soy sauce
3 tbsp honey
2 tsp cornstarch
Instructions
Make Sauce: Whisk together broth, soy sauce, honey, and cornstarch. Set aside.
Stir Fry Veggies:
Heat oil in a wok/pan. Sauté garlic and ginger (30 sec).
Add carrots; cook 2–3 mins.
Add broccoli, mushrooms, and bell peppers; stir-fry 3–4 mins.
Add snow peas, baby corn, and water chestnuts; cook 2–3 mins more.
Add Sauce: Pour sauce over veggies, stir to coat, and simmer 2–3 mins until thickened.
Serve: Season with salt and pepper. Enjoy as-is or over rice/noodles.
