Fish Cakes:

Fancy making your own fish cakes? In this episode of Food Fest, Jonny Marsh shows you how to make them with salmon and smoked haddock.

SERVES: 4

INGREDIENTS:

Mash potato made from 4 potatoes
Butter
Milk
1 tbsp dill, finely chopped
Zest from 1 lemon
2 tbsp chives, finely chopped
1 chilli, finely chopped
1.5 tbsp whole grain mustard
1 large fillet cooked salmon
1 large fillet cooked smoked haddock
2 eggs
Breadcrumbs
Plain flour
Salt
Pepper
Salad to serve

STEP 1: Prepare The Mashed Potato
Make the mashed potato by boiling four peeled potatoes until soft. Then mash together with a large knob of butter and some milk until smooth.

STEP 2: Make The Filling
Then add the dill, lemon zest, chives, whole grain mustard and season with salt and pepper. Remove the skin from the cooked fish and flake it into the mashed potato. Then use your hands to combine the ingredients together well.

STEP 3: Shape The Cakes
Beat the two eggs into a shallow dish, lightly flour another dish and place the breadcrumbs in another. Next, divide the mashed potato mix in to four and mold into fish cake shapes in the flour dish using floured hands. Then completely coat each cake in the beaten egg before lightly covering them in breadcrumbs

STEP 4: Cook
Heat some oil in a pan and fry until both sides are crispy and golden. Then transfer to a preheated oven at 180C and bake for 8-10 minutes until the insides are piping hot. Serve with salad!
