Square or shoppify style platforms? Can you provide pros & cons please...

Can you maintain an independant website to run along side of it or does that 1 url have to be used for the square, wordpress ecom, shoppify platform?

URLS's can only apply to one website. So you cant use mailboxpimp.com to go to your wordpress website and shopify at the same time.
 
Main site: mailboxpimp.com
online store: shop.mailboxpimp.com
So.... the shoppify / square joints provide many of the same functions a seperate website does...
What would I use my main website for if all the sales & so on are done on the shop.com site i create?

If you have, or plan to have multiple sites you could use the main site as a sort of menu that leads to the others.

But it may not have much purpose outside of that if I am understanding you correctly.

This. Also, your main site would talk more about you and your vision for your company that ties all your online stores together. Your "About Us" section of your online store can have a paragraph about you and your company, then have a link to your main site so customers can learn more.

Correct. This Shopify post should better help you understand the particulars.

A subdomain is a subset of your root domain that you add as a prefix to your root domain. If you want to use your root domain for another website (mailboxpimp.com) and a subdomain for your Shopify store (shop.mailboxpimp.com), then you can connect the subdomain from your third-party provider account.

I'm using BigCommerce, but Shopify is good too. Also consider starting on Etsy, then move to Shopify when you blow up. The advantage to using Etsy is it takes care of driving potential customers to the platform for you (but, you'd still do your own advertising on FB, IG, etc). The two biggest disadvantages are the fees it charges and you have no brand recognition. For example, if someone buys something from you on Etsy and tells their friends, they'll more than likely say "I bought this from Etsy.", not "I bought this from mailboxpimp." Selling from your own website obviates these disadvantages, but you'd have to deal with driving traffic to your site yourself.
