Get a large put, fill 1/3rd with beer and 2/3 water. Put them in the pot for a few minutes. The beer gets them drunk and relaxes them so they don’t fight as much and they don’t tense up for the next step.
Throw them in a large pot of boiling water or a steam bath which is even better! As soon as they turn bright red, pull them out.
The internal heat will finish the cooking process till turn a nice warm red color.
Get your butcher paper, melted clarified butter and garlic, a pocket knife (NEVER use a hammer or mallet), a little Old Bay and go to town.
