Cousin, you ready to be the new pernil lady of the family? Don’t say I didn’t warn you

Bone-in pork shoulder (mine is 11 lbs)
6 cloves of garlic, grated or minced
6 cloves of whole garlic
1 cup of sofrito
juice of 6 limes
4 tbsp of salt
3 tbsp oregano
1/3cup soy sauce
Oven bag for roasting
*scale the recipe for a larger or smaller pernil
Roast at 400 for 1 hour
Then, reduce temp to 250 and roast for another 2.5 hours.
Broil on high for 5-8 mins (keep an eye on it!)
