Cooking with Nana: Kua Mii (ຂົ້ວໝີ່ = Lao Fried Noodles)

Kua Mii (ຂົ້ວໝີ່) is Lao Fried Noodles. Don't confuse this with Pad Thai; it is a very different taste from pad thai.

INGREDIENTS
1 pkg Fresh Rice Stick Noodles (16oz - same as for pho)
5 Shallots
5 cloves Garlic
1 cup Sugar
1 tbsp MSG (optional)
1/2 cup Vegetable Oil
1/3 cup Oyster sauce
1/3 cup Thin Soy Sauce
1 tbsp Black Soy Sauce
1/4 cup Fish Sauce
1 tbsp Ground Black Pepper
1/4 cup water
Chopped Green Onion
Chopped Cilantro
Bean Sprouts, washed and drained
Eggs, fried with fish sauce & msg

INSTRUCTIONS FOR THE SAUCE
1. Mix the Oyster sauce, Thin Soy Sauce, Black Soy Sauce, Fish Sauce Ground Black Pepper, and msg in mixing bowl.
** Taste the sauce and adjust as desired.
** This is enough for 2 pounds of noodles. Halve the ingredients if you don't want more.

2. Set the sauce aside for later.


INSTRUCTIONS FOR THE NOODLES
1. Soak the noodles for at least 30 minutes before cooking.

2 . Heat the oil in a pan on HIGH, then add sugar.
** Keep your eyes on the sugar. Don't let it burn.
** Lower the heat to medium when the sugar starts to melt.
** When it is completely melted and golden brown, the sugar is ready.

3. Add the shallots and green onions.
** Stir until golden brown.
** This takes 3-4 minutes.

4. Add the sauce from the mixing bowl.
** If you are using one pkg of noodles, use only half of the sauce.

5. Add 1/4 cup of water.

5. Add the noodles.
** Turn the heat to HIGH.
** Mix to spread the sauce evenly.
** When the noodles are soft, it's ready.

6. Remove the noodles from the heat.
** Allow the noodles to cool down before adding the veggies.

7. After the noodles have cooled, add the eggs and veggies.

300g (0.66 lb) pork belly
1 tsp salt
15 small shrimps, about 200g (0.44 lb)
200g (0.44 lb) rice vermicelli "bún"
15 pieces rice paper round
Fresh greens: Lettuce, mint, cilantro, garlic chives, cucumber
For the dipping sauce:
1tbsp oil
1tbsp minced garlic
