Ingredients
Meat- 4 lbs bone-in pork rib roast
Dry Rub- 1 tbsp brown sugar
- 1 tbsp chili powder
- 1 tbsp sugar
- 1 tbsp paprika
- 1 tsp onion powder
- 1 tsp salt
- 1 tsp black pepper
Coffee Bourbon BBQ Sauce- 1 cup strong black coffee
- 1 cup bourbon
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1/4 cup red wine vinegar
- Juice and zest from 1 lemon
- 2 tbsp Worcestershire sauce
- 1 tsp hot pepper flakes
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- Preheat your grill for indirect heat
- Mix all Dry Rub ingredients together with your fingers to break any lumps of sugar and apply a generous coating on all surface of the pork roast
- Place roast on grill's indirect heat and cook until internal temperature reaches 150°F on an instant read thermometer. Cook time should take approximately 2 hours at 350°F
- While the roast cooks, mix all Coffee Bourbon BBQ Sauce ingredients in a saucepan and simmer for 20 minutes
- Glaze the roast near the end with Coffee Bourbon BBQ Sauce and sear over direct heat for 30 seconds
- Take out of the grill and let rest for 15 minutes
- Slice the roast between bones to make individual chops and serve
