not bad. I like the recipe, but I have to say that unless you really like the texture of tofu when you bite into it, I prefer seitan for recipes like this. Most tofus are REALLY soft & spongy... even the ones that claim to be "extra firm"... and even after you do the freeze-and-squeeze trick to get all the water out before cooking...

I use this stuff right here, batter it the same way... my wife & daughter love it...
