Jedi have enhanced strength and speed too. The lightsaber is not light it is energy - if anything it is a blunt weapon against Superman's muscle and force field. The X-factor is Force powers - remember Superman was killed by Doomsday with a punch or a series of punches - a Jedi Master can use the force cause Superman to become disorientated, nauseated and diarrhea with Malacia while pinning him to/thru the ground. Jedi have that superspeed and strength to hit from all angles to make you feel like you are fighting 5 people just like Superman does except even young Jedi know how to use the force to slow a fast opponent down. Even if Superman can connect a Jedi can use Moricho to put him into a deep sleep (we already know this works on him) and just hold the lightsaber to his skin until it burns through just like those blast doors (3 at one time) on Episode 1.

Blast doors were extra doors that were closed next to a room's regular entrance or other closed door to provide extra reinforcements against hostile forces such as explosives, powerful blasters, or even lightsabers. Blast doors could also be used to seal off a portion of a ship which has been breached from the vacuum of space.

Smallest stars are actually the hottest i.e. Blue. They just don't "live" as long as medium ones like our Sun or super massive ones like the Pistol Star.
