I make something similar with Pork Loin.
Marinate pork loin with whatever flavor you like for a few hours
Take a large knife and stick it down the middle of a pork loin (long ways) so it becomes a tube
Stuff with deli ham and Swiss cheese
Then make a basket weave out of bacon
Then wrap the pork loin in the bacon basket weave
Cook on the grill or in the oven
