Thinking just because I don't have an accent I'm not West Indian They try to get over on you in a second.
Hands down the best place I ever had Roti was Trinidad or from this Trini spot in Brooklyn back in the day that was actually a bakery more or less.

Someone need to drop the recipe for dhalphorie
Dhalpurie (ground split peas Roti)
Serve 8 or more
1/2 pound split peas
1/2 tea spoon saffron
2 tea spoon salt
3 cloves of garlic
1 tbl spoon veg oil
2-3 teaspoon ground cumin(geera)
1 pound of flour
3 teaspoon baking powder
1 1/2 cups water to mix
1/4 oil
Method
1- Boil spit peas with saffron, 1 teaspoon salt and garlic until firm and cooked. Drain well.
2- Grind to a powder and fry in 1 tablespoon oil for 1 min turning constantly to avoid sticking or burning.
3-Add geera and salt to taste cool.
4-Mix together flour, baking powder, 1 teaspoon salt and water to make a soft dough.
5- Knead dough until smooth.
6-Cut dough into 8 pieces or according to size of the baking stone (tawah)
7- Shape into round balls; open each and in the center and place about 3-4 tablespoons of prepared split pea filling. Pull the sides over and close up to form a ball with the filling inside. Dredge lightly with flour to prevent sticking.
8-Carefully roll out filled balls very thinly, using enough flour on surface to prevent sticking.
9- Heat and grease griddle or tawah and place a rolled roti on it.
10- Cook for 1 min ; turn over roti and brush with oil.
11- Cook for 1/2 min and turn over and brush with oil.
12- Cook remaining filled dough in this way.
Serve with curried meat or vegetables.
