This women-owned Haitian spot devotes their menu to plantains! @Bunnan BK’s plantain sandwiches, plantain waffles, and plantain pizza is @Culinary Ambassador Fleurimond’s way of paying homage to Haitian cuisine, Caribbean culture, and the black diaspora. I’ve been meaning to visit Bunnan BK (1248 Flatbush Ave, Brooklyn, NY) for a while. I really enjoyed everything I ate, but my favorite was their plantain sandwiches. I tried their griot and tasso kabrit in my sandwiches with red cabbage slaw, pikliz, caramelized onions, and special sauce. Interesting. I think remember trying plantans straight up like a regular banana but it was kind of plain to me. Maybe that's not the way to eat, so probably just my ignorance.

The way to eat them is fried in olive oil. A great complement to a bowl of red beans and rice. Also fantastic cooked this way with scrambled eggs, and maybe a little ackee.

When the skin is dark and spotted, just like bananas, they are actually sweet. If cooked before, they remind me of potatoes.

I LOVE plantains. Jamaicans and Costa Ricans work magic with them.

They have different versions.. if you had sweet plantains it would’ve been a diff taste

There surely are different ways.
This is just the way I know.
I have heard of people putting them in soups as well, but I don't know anything about that.

Simplest plantain cooking methods:

Mangu, boiled mashed with butter and pickled onions (optional). Usually breakfast.



Mofongo, fried plantains mashed with garlic, butter and some protein usually fried pork.



Tostones, green plantains fried twice and flattened.



Platano maduro, sweet (yellow) ripe plantains fried.
