Well,,,Gumbo is one of those dishes' that the "region" where you stay will have a huge impact on what's available to go into the pot, and how you prepare it. Personally, since my elders hail from Louisiana, I stand by the absolute requirement of a Roux / Rue / Roue'!!! Without that, you have "soup", not Gumbo, regardless of what you put in it!!! I've sampled some folks Gumbo after they've spent $200 to $300 dollars buying lobster, shrimp, special sausage, and all manner of other things and it was just okay because I picked out all the seafood and ate it separately. Now, you can put what you want in your pot, folks fail to understand that Gumbo was a "depression era" dish, therefore its very design and purpose was to create a meal out of nothing "scraps" and stretch it to feed a bunch of folks.
