Some of us aren't the best cooks in the world and could use some recipes so we can step our healthy eating up. I've seen multiple posts with individual dishes so why not have all of them posted in one area for katts to exchange ideas.

That's what's up though. I've seen some of her posts & am all for the vegan dishes especially since I'm looking to cut down my blood sugar level & lean out. :yes:

I got a couple.

Banana Pecan Pancakes
1 1/2 cups ground flax meal
1/2 cup flax seeds
1/2 cup dried coconut flakes
3/4 cup purified water
1/4 cup organic agave nectar or maple syrup
1/4 cup coconut butter
1 cup sliced bananas
3/4 cup chopped pecans

Combine ingredients in a food processor and blend to a medium fine consistency. Pour into 4-inch patties on a Teflexx sheet. Dehydrate at 140 for 30 minutes, flip onto dehydrator screen and continue to dehydrate at 116 for an additional 30 minutes. Serve moist with maple syrup or honey with slight cinnamon dusting. Don't have a dehydrator? Brown in a skillet on both sides


Jack Lalanne Mexican Juice
1/4 large red pepper (take the seeds out)
1 celery stalk
1/2 lime
small handful of cilantro
1 apple

Blend all ingredients until smooth.

Protein Pancakes


Description

Pancakes made with organic ingredients and topped with no sugar syrup.

Ingredients

1 cup, sauce Applesauce Unsweetened
1 serving (serving = 1/4 cup) All Whites 100% Liquid Egg Whites
1 tsp Cinnamon
1 tsp Vanilla Extract
1 tsp Baking Powder (Low Sodium)
1 serving (serving = 2 tbsp) Spectrum Organic Ground Flaxseed
1 serving (serving = 1 scoop) Ultimate Nutrition Iso-Sensation 93
1 serving (serving = 1 tbsp) Wholesome Sweeteners Organic Raw Honey
1 serving (serving = 1/3 cup) Bob's Red Mill Whole Grain Oat Flour

Directions

1 tbsp flax seed mill
1 heaping scoop vanilla ISO sensation 93
1/2 tbsp organic raw honey
1/4 cup egg whites
1/3 cup organic low GI oat flour
1 tsp vanilla extract
1 tsp cinnamon
1/4 tsp baking powder
1/4 cup unsweetened apple sauce

Mix all ingredients together and pour small amounts into non stick pan on medium heat. Once bubbles form on the top, flip over and heat until golden brown. Remove and repeat. When complete, top with fruit, sugar free maple syrup, or cinnamon flavored agave sweetener.

Turkey Fried Rice


Ingredients

3/4 cup long-grain white rice
2 tablespoons canola oil
1/2 pound ground turkey
1 tablespoon chopped garlic
1 tablespoon chopped ginger
4 scallions, sliced
1 cup frozen peas
1 cup snow peas, halved
4 carrots, sliced
2 tablespoons hoisin sauce
2 tablespoons rice vinegar


Directions

Cook the rice according to the package directions.
Meanwhile, heat the oil in a large skillet over medium-high heat. Add the turkey, garlic, ginger, and half the scallions and cook, breaking up the meat with a spoon, until browned, 3 to 5 minutes.
Add the rice, peas, snow peas, carrots, hoisin sauce, and vinegar to the turkey mixture and cook until heated through, 2 to 3 minutes. Top with the remaining scallions.

I usually replace the white rice with brown. cook up a trader joes egg roll in the oven and you have chinese food without the msg and salt you would get from you local take out place.

I have one for general tso's chicken too i will post a little later.

how do i cook tofu

First you must drain and squeeze all the water out of it. Cut it in half lengthwise after you have carefully squeezed as much water as you can out with your hands without crumbling it. Then wrap it in papertowels and put a heavy pot with water in it on top to press out all the water. Once all the water is pressed out, tofu is like a sponge and will absorb whatever marinade or seasoning you put on it. You can bake it, broil it, grill it, saute it, anything. If you want a chewier texture, press out the water like I told you and then freeze it and thaw it and it will have a much chewier more "meat like" texture.

I also will put the tofu in the cuisinart with seasonings and a pinch of agar agar or arrowroot to bind and boil some grains and saute with some veggies and seasonings and mix and bake in greased loaf pans and serve with gravy :yes:
