Curry Cabbage With Leftover Caribbean Stewed Chicken.

Recipe for making Caribbean style curry cabbage (cabbage curry) using cabbage from my garden and with leftover Caribbean stewed chicken for additional flavor. With a base of garlic and onion, then madras curry powder is added to bring out that rich curry depth with the cabbage gently steams. The final 5 minutes of cooking the left over stewed chicken is add, so if you want to make this dish fully vegetarian, all you have to do is leave out the chicken. So this curry cabbage can also be 100% vegetarian.

You'll Need...

1 medium cabbage (shredded)
1 small onion
4 cloves garlic
3/4 teaspoon salt
2 tablespoon curry powder
2 tablespoon veg oil
1/4 scotch bonnet pepper
1/4 teaspoon black pepper
* left over stewed chicken

* I used a amdras blen curry powder made in Trinidad and Tobago.

How To Cook Curry Lobster.

In this recipe we'll cook curry lobster (or lobster curry) using a traditional Caribbean curry recipe. Seasoned and marinated overnight, then we'll cook some madras curry into a paste to get the raw curry flavor out, then the marinated lobster will be added to the pot to cook in the rich Caribbean curry sauce.

You'll Need...

2 lobster (about 3lbs)
1/2 teaspoon salt
1 tomato
1 tablespoon Caribbean green seasoning
1/4 teaspoon roasted geera (cumin)
1/4 teaspoon amchar massala (optional)
4 cloves garlic
1 small onion
1/4 onion for cooking curry
2 sprigs thyme
1/4 teaspoon black pepper
1 cup water

2 tablespoon veg oil
3 tablespoon curry powder
1/4 cup water to cook the curry

With two layers of paratha roti, stuffed with cheese, scotch bonnet pepper, garlic, carrots, potato and a host of other delicious ingredients, this pepper roti recipe will certainly make you go out and make a batch for your family.

You'll Need...

Roti

2 cups all purpose flour
pinch salt
2 tablespoon baking powder
1 teaspoon butter
1 - 1 1/4 cups water
1 teaspoon veg oil

Filling

1 scotch bonnet pepper finely diced (no seeds)
1/2 cup grated carrot
1 cup grated potato
1 cup grated cheese (cheddar aged)
3 cloves garlic (crushed)
1/2 cup sweet pepper (bell pepper) grated

2 tablespoon veg oil for cooking the roti.

A wonderful recipe for making curry beef (beef curry) as it's done in the Caribbean with potatoes. Something our mom would do whenever she wanted to stretch the amount of meats (beef, chicken, etc) she had to feed the entire family.

You'll need....

1 lb beef
4 large potatoes
3/4 teaspoon salt
1 medium tomato
3 birds eye pepper (or 1/4 scotch bonnet)
1/4 teaspoon thyme
2 scallions (green onions)
1 tablespoon chopped shado beni (culantro)
1/4 teaspoon black pepper


2 tablespoon veg oil
1 small onion
3 cloves garlic
2 tablespoon curry powder
4-6 cups water
2 tablespoon chopped cilantro (to top the dish when done)

Oh my damn:eek::eek::eek: MB, I can't believe I missed this one. I haven't seen alot of recipes calling for curried beef. This is really interesting. Wondering how many on the board have actually tried this, and if so what was your reaction taste wise???

Caribbean Stewed Chicken With Red Beans Recipe.

A delicious recipe for making stewed chicken with red beans as it's done in the southern Caribbean. Using a traditional Trinbagonian (Trinidad and Tobago) method of marinating the chicken in fresh herbs, then it's stewed in a lovely browning made form brown sugar, after-which the kidney beans are added to be infused with all the lovely Caribbean flavors.


You'll Need


3 Lbs Chicken (I like using drum sticks)
1 scallion
1 onion
3 cloves garlic
1 teaspoon ketchup
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon grated ginger
3 sprigs thyme
3 drops Worcestershire sauce
1 small tomato
1/4 scotch bonnet pepper
2 cups water
1 can red kidney beans (rinsed/drained)
1 tablespoon brown sugar
1 tablespoon veg oil

Chicken livers are enjoyed throughout the Caribbean and though this recipe may vary a bit from island to island, one thing is common.. our love of flavor. Cooked dry or with a gravy (add a little water when cooking) curry chicken livers (chicken liver curry in Guyana) is an excellent side dish, but I just love these on sandwiches and a great way to get your family to like chicken liver.

You'll Need...

1 lb Chicken Livers
pinch black pepper
1 tablespoon veg oil
1/4 teaspoon salt
3/4 cup bell pepper
2 scallions (green onions)
1 shallot (or small onion)
4 cloves garlic
2 sprigs thyme
4 bird's eye pepper (or 1/4 scotch bonnet)
3 leaves shado beni (or cilantro)

Traditional Caribbean Sorrel Drink.

A quick recipe for making one of the most traditional Christmas drinks in the Caribbean, sorrel. Traditionally sorrel is made around the holiday season as that's when the flowers are usually matured enough for making the drink.

1 lb sorrel flowers (trimmed)
8 cups water
1 cinnamon stick
2 pieces of dried orange peel
4 cloves
thick slice of ginger
sugar to sweeten

You can add more sorrel flowers if you want a more concentrated drink and if you'd like to spike this drink.. add some rum.

Here's my take on a festive pineapple vegetarian rice dish, making use of fresh vegetables along with day old rice. You can also add pieces of chicken, shrimp or beef if you'd like to make it a meat dish. However you'll be quite surprised by the wonderful flavors of this vegetarian dish. The garlic, ginger, curry and slight undertones of the bird's eye pepper will have your taste buds screaming for more.

You'll need...

4 cups rice (day old)
1/4 teaspoon salt
2 bird's eye pepper (or 1/4 scotch bonnet)
1 tablespoon soy sauce
3 cloves garlic
1 large onion
1 bell pepper (1/2 yellow + 1/2 red)
1/4 teaspoon grated ginger
1 scallion
1/2 carrot
1 stalk celery
1.5 cups pineapple
1 tablespoon veg oil
1/2 tablespoon sesame oil
1/2 tablespoon hoisin sauce
1 teaspoon curry powder

optional - toasted coconut flakes - topping.

Here's a quick and tasty recipe for preparing baby pak choi the Caribbean way. We'll start off by slowly cooking garlic and onions, then we'll add some salted cod (saltfish) to really enhance the flavor of the dish. Finally we'll add some scotch bonnet pepper for kick and quickly cook the chopped baby pak choi (bok choi) until it has a slight crunch.

In the Caribbean we use the entire chicken, so making a soup with the feet are something that's quite natural. Seasoned with fresh herbs, thick with ground provisions like sweet potatoes, eddoes, potatoes, green bananas and finished with flour dumplings, this is a wonderful one pot dish.

For this chicken foot soup you'll need...

1 lb chicken feet (cleaned and trimmed)
2 chicken stock cubes
1/4 teaspoon black pepper
4 green cooking bananas
5 small eddoes
2 medium sweet potatoes
2 potatoes
water
1 tablespoon veg oil
1 large onion
4 cloves garlic
1 scallion
4 sprigs thyme
1 scallion
2 cups diced pumpkin
salt (taste and adjust accordingly)
1 scotch bonnet pepper
2 medium carrots


* You can add flour dumplings, yams, cassava, dasheen and other ingredients to personalize this chicken foot soup.

Chris De La Rosa of CaribbeanPot.com kicks of his annual July Month of Grilling with this scrumptious Mango Coconut Shado Beni (chadon beni or culantro) Grilled chicken. A wicked marinade made up of coconut milk, freshly grated ginger, organic honey, limes, ripe mango, shado beni and Caribbean sunshine - scotch bonnet pepper is used to infuse the chicken piece with true Caribbean flavors. Before they are grilled on an open flame to perfection. If you cannot get Shado beni, you can use cilantro with the same flavor profiles.


For this grilled chicken recipe you'll need:

3 chicken breasts (about 2.5 - 3 lbs)

1 large mango (diced)
1/2 cup chopped shado beni (or 1 cup cilantro)
2 scallions
2 sprigs thyme
1 tablespoon grated ginger
4 cloves garlic
1 cup coconut milk
2 tablespoon olive oil
2 limes (juice)
1/2 scotch bonnet pepper (no seeds)
2 tablespoon honey
1 cup water (divided)
