5 Cheese Macaroni and Cheese
Episode 22 : Grandma's Kitchen
Ingredients
2 pound box elbow macaroni
1 bar unsalted butter
8 medium eggs
1 cup milk
1 can condensed milk
¾ cup parmesan cheese shredded
¾ cup feta cheese
1 cup mild cheddar cheese shredded
2 cups mozzarella cheese shredded
1 cup sharp cheddar cheese shredded
1 teaspoon salt
1 tablespoon seasoned salt
1 teaspoon pepper
Procedure

1. Bring water to boil in a large pot, and add macaroni

2. When soft, strain macaroni and place in a large bowl

3. Add butter, mix in then set aside

4. Add eggs, milk and condensed milk to a separate bowl

5. Beat egg and milk mixture with whisk

6. Pour mixture into large bowl with macaroni and mix gently with spatula

7. Add all cheese

8. Season with salt, seasoned salt and pepper

9. Fold together with spatula

10. Check consistency and add more milk if too stiff

11. Sprinkle a little cheese on the bottom of a casserole dish

12. Spoon macaroni and cheese mixture into dish

13. Smooth over with spatula

14. Sprinkle all remaining cheese on top

15. Place in oven for 30 minutes at 325 degrees

um i can do greens the traditional way but usually i cut up my green and sautee them with a little turkey stock and onions taste better to me and does not seem as heavy either, also instead of candied yams/sweet potatoes, i let some butter sit out and soften and when its soft i make a compound butter with amaretto,vanilla, brown sugar,cinnamon and nutmeg, i then take the yams and roast them for a little bit then slice them open and add the butter mixture then roast them some more until desired texture i don't like them mad mushy so i just cook em until tender

don't eat too much ham but got a recipe from my grandmother and added my own flavor too it feel free to try it, get a ham with some fat on it soak it to remove excess salt then dry it then in a bowl brown sugar about half a cup to a cup add a glass of root beer or bourbon (if bourbon like half a glass) then add a pinch of sea salt, pepper mustard cumin a little red pepper

that 5 cheese Mac shit sound FIRE. I have his cookbook and i didn't really like it that well as far as the other recipes. But i have a Food Network cookbook and a Sunday NIght Football cookbook that i tried sum shit out of and them shits was off the METER. I started cookin cause i got tired of goin over people's house and all they got is "Yardbird" (chicken for the MORONS). Give me a sec and i'll type sum to help y'all out....:yes:

Stuffed Shells with Arrabiata Sauce
2 tbl sp olive oil plus extra for greasing baking sheet and dishes

1 12 ounce box of jumbo pasta shells

6 ounces of thinly sliced pancetta (salt cured bacon. but turkey bacon will do just fuckin fine)

2-3 teaspoons crushed red pepper

2 garlic cloves, minced

5 cups marinara sauce

2 15 ounce containers of whole milk ricotta cheese

1 1/3 cups of grated parmesan

4 large egg yolks

3 tbl sp chopped fresh italian parsley leaves

3 t/l sp of chopped fresh basil

1 tsp of chopped fresh mint

1 1/2 tsp of kosher salt

1/2 tsp fresh ground black pepper (try 2 cook more with kosher salt and fresh ground pepper. shit is excellent AND brings out more flavor in food TRUST ME :yes:)

1 cup shredded mozzarella cheese

1. lightly oil a baking sheet and set aside. Lightly oil 2 13x9x2-in baking dishes and set aside also (it will be that much and u will want 2 take this shit for lunch for a few days, PLEASE BELIEVE.) Bring a large pot of SALTED water to a boil over high heat. Partially cook the pasta shells until al dente (tender yet slightly firm) 4 to 6 mins. Drain shells and placed in oiled baking sheet. spread out so they don't stick together and let cool.

2. Heat the 2 tablespoons of oil in a heavy medium saucepan over medium heat. Add the pancetta and saute until golden brown (about 5 mins). Add red pepper flakes. Add garlic and saute until tender (about 1 min). Add the marinara sauce and bring to a simmer stirring often.

3. In a medium bowl, stir together ricotta, parmesan, egg yolks, parsley, basil, mint, salt, and black pepper. Set aside.

4. Preheat oven to 350. Spoon 1 cup of sauce over the bottom of each baking dish. Fill each cooked shell with 1-2 t/l sp of the cheese mixture. Arrange shells in the baking dishes. Spoon the remaining sauce over the shells, then sprinkle with mozzarella. Bake in lower third of oven until the filling is heated all the thru and top is golden brown (about 30 mins).

I have baked with both pancetta and turkey bacon. tastes the same damn near. Add a little more red pepper if u like it spicy. I do all the time. It's a LOT of prep, but the outcome will get everybody's attention, make bitches get out of clothes, etc. ENJOY.:D

all jokes aside though.. I have been using epicurious.com for years.

I hate hearing my friends say they cant cook & they rely on a female to do that for them.. the way I see it, if you can fuckin read.. you can cook. Thats all it takes to follow a recipe.

I'm adding a whole salmon cooked on a cedar plank along with the other meats this year. Also, I'm going to do a regular dressing to go along with a dressing with smoked oysters, shredded crab claw meat and, cajun shrimp inside.

I'm traveling for turkey day but hosting Christmas. Have not decided entire menu but I'm going to cure a salmon (salt, citrus, and brown sugar) and I just say a turkey confit on triple d that got my attention. Going to test it out on the fella's a few Sundays before the holiday and fine tune it for Christmas. That mac and cheese sound right. I made on last year with all these special cheeses and mushrooms and it was a little pertentious (that's what the fuck I said "it mac and cheese how...) for the family let them tell it. That sounds good, basic, and creamy (plus they can pronounce the cheeses).
