Thanks for the recipe Bumbay.

I'm going to look into that book after I make way through "Vegan Soul Kitchen".

Peace Iz,

You will like the "THE ARTFUL VEGAN". Only draw back about some recipes require a few ingredients, but if you get you basic spices that are used in the recipes you are cool.

The "VEGAN SOUL KITCHEN" I was unaware of I will have t check it out.

In your location it says "MINERAL CITY" where is that located?

Only in my mind lol. There is a real Mineral City in the state of Ohio I believe. I lived in Ohio for a few years when I went to school.

Vegan Soul Kitchen is by Bryant Terry. He is one of the few vegan cookbook authors of African descent that I have ever come across. His book has lots of revamped Southern, African, and some Caribean inspired vegan meals.

Another favorite of mine is the Voluptuous Vegan. I used it all the time when I was a strict vegan, but she uses a lot of American Southwestern flavors and peppers.

My dear I have not found an e-version.
I had to come out of pocket for that!

I lasted 18 minutes ... :(

You don't have to give it up entirely. I'm not a vegan anymore, but I still cook and eat meatless most nights of the week. Its a good way to incorporate more healthy foods in your diet and lessen your dependence on meat (and in your case Sean lasagna) to make a good meal.
